Get Picnic Ready For Spring

With Spring almost upon as, we’re thinking about lazing sunny days away. Your favorite beach? A nearby park? Warmer weather and thoughts of the great outdoors prompted an incredibly easy tartine recipe good for leisure days away from home.

Salmon + Herb Tartine

Ingredients
  • 1 Small Loaf (8 slices) Kalamata Olive Bread
  • 1 Large Piece Smoked Salmon
  • 1 Persian Cucumber
  • ¾ Cup Arugula
  • ¼ Cup Plain Yogurt
  • ¼ Cup Sour Cream
  • 2 tsp Fresh Dill, chopped
  • 1 Tbsp Capers
  • 1½ Tbsp Lemon Juice
  • Dash Sea Salt
  • Dash Black Pepper, coarsely ground
Instructions
  1. Grate cucumber and squeeze out excess water.
  2. In a small bowl, mix cucumber, yogurt and sour cream.
  3. Chop dill and add.
  4. Squeeze in lemon juice and add salt and pepper and mix well.
  5. Assemble starting with salmon followed by spread, capers and arugula.

Tip

Small ramekins work well for separating ingredients and transporting to your picnic destination allowing you to assemble when you arrive!

Tip

We love Akesson’s Giant Pagoda Sea Salt for its exquisite texture though any pyramid salt or ground sea salt works well for garnish.
