In addition to the cooling of the weather and the leaves changing, one of the best parts about Fall is that all things pumpkin become abundant. Pumpkin pie, pumpkin muffins, pumpkin lattes, pumpkin everything – you name it! One of our favorite pumpkin treats for this time of year are the actual pumpkin seeds. Versatile in flavor and easy to make, they are the perfect protein-filled snack for Autumn! Sweet, savory, salty, or plain, there is any number of ways to spin them into a delicious seasonal snack – you can even add them to trail mix for a nice added pumpkin flair! Try out this classic recipe below for an easy snack to munch on this Fall; we’re sure you won’t be disappointed!
- Pumpkin seeds
- Olive oil
- Salt + Pepper
- Rinse off seeds in a colander. Meantime, boil water and add salt.
- Add seeds tosalted water and boil for 10 minutes. Drain, pat dry.
- Place seeds on a cookie sheet then add thin slices of butter and drizzle with olive oil. Salt and pepper. Toss all together.
- Bake 350 for 5-20 minutes. 5 minutes for the smaller seeds and up to 20 minutes for the larger seeds.
