Matcha is having a moment. This trendy tea has made its way into our kitchens, adding a distinctive, earthy richness to lattes, smoothies and baked goods. Carry the green theme into your St. Patrick’s Day celebration by infusing this antioxidant-packed green tea into homemade whipped cream sandwiched with chocolate pies. It’s healthy and holiday chic.

Ingredients
Pies
  • 1¾ cups flour
  • ¾ cups dutch-process cocoa powder (unsweetened)
  • ½ tsp sea salt
  • ½ tsp baking soda
  • 1 cup brown sugar (packed)
  • 1 stick butter (unsalted)
  • 1 egg
  • 1 cup of buttermilk
Matcha Filling
  • 1½ egg whites
  • ¼ cup + 2 Tbsp powdered sugar
  • ¼ cup water
  • 1½ tsp corn syrup
  • ¼ tsp vanilla
  • 1 tsp matcha green tea powder
Instructions
Pies
  1. In a medium bowl, mix flour, cocoa powder, sea salt and baking soda.
  2. Using an electric mixer, combine brown sugar and butter on medium-high speed for 4 minutes.
  3. Add egg and mix well.
  4. Alternate pouring in dry mixture and buttermilk. Continue mixing until smooth.
  5. Pre-heat oven to 400.
  6. Spoon out 24 dollops of batter onto parchment lined baking trays and bake for 10-12 minutes.
Filling
  1. In a saucepan, heat ¼ cup Powdered Sugar, Water and Corn Syrup over a medium flame.
  2. Stir for 1-2 minutes or until sugar is completely dissolved and bring to a boil for 2 minutes while continuing to stir.
  3. Reduce flame to simmer and in a medium bowl, mix Egg Whites using an electric mixer for 2 minutes or until foamy.
  4. On low-medium speed, mix in 2 tablespoons Powdered Sugar.
  5. Slowly pour in warm liquid mixture followed by vanilla while continuing to mix.
  6. Add Matcha Powder and mix on medium-high for 5 minutes or to firm peaks form.
Assembly
  1. Remove from oven and allow to cool completely on cooling rack.
  2. Add a dollop of cream filling to 12 pies and place the remaining 12 on top to make a sandwich.

Tip

If you prefer to use the Matcha for holiday color as opposed to taste, use only half a teaspoon. Present your beauties with contrasting patterned cloth napkins or tea towels.
