The perfect addition to a delicious burger, or a great solo snack, we think that french fries (or better yet, homemade potato wedges + ketchup) are just about one of the most delicious and all-American things that you cant eat. However, have you ever wondered how to actually make them? It’s a lot easier than you might think! This thick cut oven baked potato wedge recipe (or as we grew up calling them, Jo Jo fries!) is so simple and yummy, you’ll be wondering why you haven’t made it sooner. With simply the cost of a few russet potatoes, olive oil and your favorite seasonings, this recipe is cheap and easy enough to become a regular in the household…and trust us, you and your family will be devouring these. Ingredients
  • 3 Russet potatoes washed
  • Olive oil
  • Seasoning of choice   *We chose cayenne, smoked paprika and a liberal amount of sea salt and pepper*
Instructions
  1. Preheat oven to 425 degrees.
  2. Cut potatoes in half lenghth wise. Then slice into wedges.
  3. Pat with a dry paper towel to remove some of the excess starch.
  4. Lay wedges onto a parchment paper lined cookie sheet. Toss in olive oil and add seasonings liberally.
  5. Toss half way through. Bake until crispy.

Homemade Ketchup

Ingredients
  • 6 medium sized tomatoes cored and halved
  • ½ onion chopped
  • 3 cloves garlic chopped
  • 2 Tbsp tomato paste
  • 1 Tbsp honey
  • 2 Tbsp brown sugar
  • 2 Tbsp cider vinegar
  • ⅛ tsp allspice
  • ⅛ tsp dry mustard
  • sea salt
  • pepper
  • olive oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Toss tomatoes in olive oil and place on parchment lined cookie sheet.
  3. Roast tomatoes for 15 minutes.
  4. While roasting, sauté onions and garlic until onions are translucent.
  5. Puree roasted tomatoes in a food processor. Then strain to remove seeds.
  6. Add tomato puree to onions and garlic. Continue to simmer while adding remaining ingredients.
  7. Puree when final flavor is reached. Can be store in refrigerator for up to 2 weeks.
  8. Enjoy with homemade french fries!

Recipe Tip
