Colorful Cobb Salad

A Lovely Lunch

It’s said that we eat with our eyes first, and Cassie from Deco Tartelette seems to have dreamed up this Cobb Salad with that phrase in mind. Bright with “layers of color and filled with all sorts of goodies, this salad has become my go-to weekend lunch,” says Cassie. “It’s super pretty and incredibly hearty!” Considering how easy to assemble and yet full of nutrient-packed, tasty ingredients–avocado, sunflower seeds, figs, bacon and more–this simple salad will easily become your go-to meal.

Colorful Cobb Salad
Recipe type: Salad
Serves: 2 servings
  • ½ cup organic, oven-roasted turkey breast, chopped
  • ¼ cup stilton or your favorite blue cheese, crumbled
  • 1 organic carrot, peeled and shaved
  • 5 organic figs, halved
  • 5 heirloom cherry tomatoes, halved
  • A handful of edible flowers ( fennel, chive, calendula, and leek flowers are just some ideas)
  • 1 strip cooked bacon, chopped
  • 2 organic eight-minute hard boiled eggs
  • ½ organic avocado, sliced
  • 2 cups organic greens, torn into pieces
  • ½ cup toasted sunflower seeds
  • ½ cup buttermilk + yogurt blue cheese dressing
  • Salt + Pepper to taste
  1. Simply assemble the ingredients onto a platter as you fancy. Drizzle with dressing. Dive in and enjoy.
