Celebrate Cinco de Mayo this year with some festive decor, delicious food, and (of course) some margaritas. Use brightly colored serveware and decor in fun patterns to set the mood. Citrus Granita
 
Ingredients
  • 1½ cups orange juice
  • ¼ cup sugar
  • ¼ cup lemon juice or lime juice
  • 1 medium orange, peeled, sectioned, and finely chopped
  • 1 small lemon or lime, peeled, sectioned, and finely chopped
Instructions
  1. For syrup, in a small saucepan combine orange juice and sugar. Cook and stir over medium heat until sugar dissolves. Remove from heat. Stir in lemon juice; set syrup aside to cool for 30 minutes.
  2. Stir orange and lemon pieces into syrup. Pour into an 8x8x2-inch baking dish. Freeze, uncovered, for 2 hours, stirring and scraping frozen mixture off bottom and sides of dish every 30 minutes. Cover and freeze, without stirring, about 4 hours or until firm.
  3. To serve, let granita stand at room temperature for 5 to 10 minutes. Use the tines of a fork to scrape across the surface of the granita. Spoon into chilled dessert dishes or into a orange half that has been scraped clean. If desired, garnish with citrus slices. Makes 4 cups.
