Chicken Soup
  • 1 Tbsp butter
  • ½ cup chopped onion
  • ½ cup chopped celery
  • 1 (14.5 oz) can vegetable broth
  • 4 (14.5 oz) cans chicken broth
  • ½ lb chopped cooked chicken breast
  • 1½ cups egg noodles
  • 1 cup sliced carrots
  • ½ tsp dried oregano
  1. In a large pot over medium heat, melt butter.
  2. Cook onion and celery in butter until just tender, 5 minutes.
  3. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, dried oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer 20 minutes before serving.
  5. Add fresh parsley at the end as a garnish.
