My friend made this salsa for us many years ago and it quickly became one of our favorite snacks.  Besides the beautiful combination of colors, it is healthy and filled with lots of vitamins.  This salsa can be adapted to your preferences–you can leave out any of the ingredients and it will still taste great!  Using exact measurements is not important when making this salsa.  You can adjust the spiciness with the amount and kind of chili peppers you use.

Black Bean Salsa

Ingredients
  • 2 (15 oz) cans black bean, drained and rinsed
  • 2 mangoes, peeled, pitted, and cubed
  • 4 fresh tomatoes, cubed
  • 1 white onion, finely chopped
  • 1-2 serrano peppers, deveined and finely minced
  • ½-1 cup cilantro, chopped
  • juice of 3-4 limes
  • 4 avocados, pitted and cubed
  • salt to taste (don't be shy, the beans and avocados taste better with salt)
Instructions
  1. Add all ingredients (prepared as listed above) to a large bowl and gently stir to combine.
  2. Serve with tortilla chips.

Kitchen Safety

You can use jalepeño peppers instead of serrano peppers, which are less hot. These are spicy chilies, so you may want to wear gloves when handling them. Do not touch your eyes until the oils from these hot numbers are off of your hands.
