MEATPACKING CHIC

STORY AND PHOTOS CONTRIBUTED BY WHERE WOMEN COOK

ABATTOIR [French for slaughterhouse] is a family-style, meat-centric restaurant  suitably located in Atlanta’s meatpacking district. Here, owners and chefs Anne Quatrano, Clifford Harrison and Joshua Hopkins focus on honoring the food they serve. “We don’t waste anything, ” Hopkins says. “We do our own butchering, which makes our food that much fresher.”  The chefs meet with local farmers to ensure the quality of their ingredients, and make sure that something regional makes its way into every meal.

What’s for Dinner

The menu is seasonal and changes often, but you can expect to find things like short rib bourguignon, oven-roasted halibut, or a gulf crab cake with leeks and baked potato foam. Don’t miss the plate of charcuterie.

“With any dish, I try to be slow and thoughtful in the way I create it. I read and research menus and cooking in my spare time, and I hope it shows in the time and thought I invest in my dishes.” – Chef Hopkins
